Dessert Sunday! PB Hot Fudge Pudding Cake

We don't do a lot of dessert around here. If we're going to have dessert it's going to be Sunday night after a nice supper or Friday night with the pizza and movies.

Tonight's dinner was supposed to be a lovely roast. However, The Terrorist got in to the refrigerator and left the door open. Little Miss saw her opportunity and grabbed a dozen eggs and dropped the carton on the floor. The mess wasn't too bad since the eggs were still in the carton. But they were broken. We ended up having breakfast for dinner.

Dessert actually came earlier in the day. We had a potluck lunch immediately after church services. I opted to use make a crock pot dessert. From the comments of the crowd, it sounded like no one had seen dessert in the crock pot before! They were a bit apprehensive but once they tried it, my dessert was gone in a flash.

Like most hot fudge pudding cakes, this one was exceptionally rich. What makes this one special is peanut butter. Oh yes...peanut butter and hot fudge. It would have only been made better by vanilla ice cream, but that could quite possibly put it over the edge for richness. I think cool whip would be lovely, too, but I'm a vanilla ice cream kind of gal.

I made this recipe in my 6 qt crockpot and had to QUADRUPLE it! I think it was designed for a small crockpot. If I made this for my family, I think I would still have to at least triple the recipe. If you are serving at least 4 people, double it.

Peanut Butter Hot Fudge Pudding Cake

  • In a bowl, combine flour, 1/4 cup of sugar, and baking powder.
  • Add milk, oil and vanilla; stir until smooth.
  • Mix in peanut butter and pour into Crock-pot.
  • In the same bowl, stir together the 1/2 cup of sugar and cocoa powder.
  • Gradually stir in the boiling water.
  • Pour this mixture over mixture already in crock-pot.
  • DO NOT STIR
  • Cover and cook on High for 2 to 3 hours or until a toothpick inserted comes out clean. Serve warm with vanilla bean ice cream, hot fudge sauce and top with your favorite nuts.
