Ranch Chicken Salad Sandwiches

With all the home improvement projects around the house this week, I've taken to preparing quick meals like this Ranch Chicken Salad Sandwich. I was inspired by a Rachael Ray recipe and made this version using what I had on hand.

It was a huge hit and I wish there had been leftovers for the next day. I'm thinking about throwing it all in a wrap for the kids' lunches next time.

Before we get in to the whole recipe, I wanted throw in a little tip for you all...I don't know if you've seen on Pinterest how you can toss boneless chicken in to the Kitchenaid and it will shred the chicken. It's pretty cool...if you own a Kitchenaid. I don't. I have a Bosch Universal. BUT... you can do the same thing in your Bosch.

Here's the thing...you don't need either of those to shred the chicken easily. All you need is a hand mixer! The only difference is you can't walk away and let the machine do it for you. Still, it's a super easy way to shred your chicken and you don't need a really expensive tool to do it. 



Ranch Chicken Salad Sandwich
adapted from Rachael Ray

3 C shredded cooked chicken (poached or from a rotisserie)
1 C Greek Yogurt
3/4 C mayo
1 T Ranch Dressing Powder
1/2 cooked chopped bacon
lettuce
tomato
buns/tortillas

In a large bowl mix together yogurt, mayo and ranch powder. Stir in chicken and bacon. Chill 30 minutes. Place lettuce and tomato on bun, then add chicken salad. Putting the lettuce on the bottom keeps the bread from getting soggy.

  2. Ok. This sounds great. I have NOT seen the bit about shredding chicken on pinterest. Are you talking about the mixer or the blender? If mixer, which paddle do you use?
