Fresh Cherry Sauce

I love cherries. So very much.

One thing I miss about living in the Pacific Northwest is having access to an abundance of inexpensive cherries. By inexpensive, I mean free. My in-laws have a cherry tree.

It's not unusual here to see cherries at $5 a pound. Sometimes, I can find them for $2 a pound and that's when I stock up. We haven't lived in Oregon for nearly a decade and I still feel a little part of me die when I pay that price for cherries.

Several years ago, I found this recipe for an easy cherry sauce from a former contestant of The Next FoodNetwork Star. I had to make a small change to the recipe to use ingredients I had on hand and i have to say, I love my adapted version.

It's super delicious on vanilla ice cream or plain Greek yogurt.

Fresh Cherry Sauce
1 pint sweet red cherries
2 T Strawberry Jam
1 cinnamon stick (about 2 inches long)
½ teaspoon balsamic vinegar

Pit the cherries into a saucepan and toss with strawberry jam. Let sit in the pan for about 30 minutes "marinating." Turn the heat to medium-low. Add cinnamon stick and balsamic vinegar. Cook for about 10 minutes, until the juice thicken.
