Meatball Sub Casserole

Teaching kids to cook is important. For me, it's one of the things I look forward to. It's a fabulous time to bond and the kids learn so much.

And not just how to cook.

It's a great way to teach reading and math skills, too. I always make sure to give the kids a chance to half or double recipes so they get familiar with fractions.

The downside is sometimes they decide to cook without you...

Earlier this week Punky Brewster decided she wanted cookies. She pulled out a boxed mix that I usually save for last minute "Mom! I need..." and managed to follow the recipe. She couldn't get the oven on, thank goodness.  She got help from Leelee who was in charge while I was at my doctor appointment.

After that, I decided to let Punky make dinner

So easy a 7 year old can do it!

Meatball Sub Casserole

1 small bag frozen meatballs
1 loaf French bread baguette
4 oz cream cheese, softened
4 T mayo
2 C mozzarella cheese, divided
2 Cspaghetti sauce
1/2 C water

Preheat oven to 350. 

Slice bread in to chunks and place in to 9 x 13 baking dish. 

Meanwhile in a small bowl, mix together cream cheese and mayo.

Spread cheese mixture over the bread. Top with meatballs. Sprinkle with 1 C cheese.

In another bowl, combine spaghetti sauce and water. Pour over meatballs and cheese in casserole. Sprinkle with remaining cheese.

Bake for 25 minutes.

  1. What a clever twist on meatball subs. We are having meatball subs on Thursday I may try to mix it up.
